It feels like spring is getting close around here! The sun has been shining and warm the past few days, the snow is melting, and the days are feeling longer. I don’t think we’re quite out of the woods yet though, and we’re still hanging on to hot chocolate for as long as we can.
Last weekend, Trevor and I took the kids out for an afternoon of cross country skiing. It was my first time, and Alec was quite eager to show me how its done. We had a lovely afternoon, and we’ll for sure be taking up the sport as a family. I love that we have found something we all enjoy about winter.
An afternoon in the snow would not be complete without a nice warm cup of hot chocolate to finish it off. I whipped up a batch before we left, and we took a thermos with us. If you’ve never tried making your own hot chocolate from scratch, you should try this! I have always used package mix in the past, but I didn’t feel great giving it to Alec. I wanted to control the ingredients (and the SUGAR!). This recipe certainly has sugar, but I don’t feel its overly sweet. Its creamy and awesome!

The Best Hot Chocolate (ever)
(Makes 4 adult servings, or 6 kid-sized servings)
- 1/4 cup cocoa powder
- 1/3 cup sugar
- 1/3 cup hot water
- 1 tsp vanilla
- couple of pinches of salt
- 4 cups of whole milk
- In a saucepan, over medium heat, whisk to combine the cocoa, sugar, hot water, vanilla and salt.
- Bring it to a simmer, and keep whisking so nothing sticks or burns. Slowly pour the milk in the saucepan, and continue to whisk until its combined.
- Bring it back up to a simmer, then either keep it in a thermos or pour into mugs, top with marshmallows or whipped cream if you so choose, and ENJOY!
